MEXICAN BEAN SOUP

Protein an flavor packed soup that has your favorite traditional Mexican flavors in every vegan bite!

Ingredients Needed:  Olive oil, onion, tomatoes, garlic, carrot, beans, corn, potatoes, broth, water, oregano, paprika, cumin, salt, and black pepper

STEP 1: 

In a large stockpot, cook down the carrots and onions until tender.  Then stir in the garlic until it is aromatic.  

STEP 2: 

Add the broth and potatoes along with the remaining spices and seasonings. Stir this together and simmer as directed, until the potatoes are tender

STEP 3: 

Add the tomatoes and beans, and simmer until heated through and all flavors have combined.  

Top this soup with a sprinkle of fresh chopped cilantro or a lime wedge.  This is a great make ahead vegan meal lunches for all week!
