KIDNEY BEAN SALAD

This easy to make salad is ready in under 15-minutes! Filled with fiber, protein, and flavor, a perfect lunch dish!

This recipe uses simple pantry ingredients with a few fresh vegetables to whip up a salad that is great for a side dish, snack, or lunch entree!

STEP 1: 

Rinse and drain the kidney beans, chickpeas, and corn then place into a bowl with chopped onion, cucumber, and parsley. 

STEP 1: 

Now, in a bowl you will whisk together the olive oil, mustard, salt, black pepper, and garlic to make a dressing.  Whisk until combined. 

STEP 1: 

Pour the dressing over the bowl of vegetables and toss everything together to combine.  Make sure all of the ingredients are coated.  Taste and add salt if needed. 

This is a great fast and easy lunch salad.  Serve alone, with sliced avocado, tomatoes, or with tortillas for wrapping or dipping!
