Vegan Pulled Pork Burger with Mushrooms

  • 4 tablespoon vegan mayonnaise
  • ½ cup vegan coleslaw

Instructions
 

  • Heat the oven to 375°F/190°C and prepare a baking sheet with parchment paper.
  • Tear the mushrooms into strips to resemble meat.

  • In a big bowl, combine the mushroom strips, olive oil, liquid smoke, garlic and onion powders, oregano, paprika, chili powder, salt, and black pepper.
    3 tablespoon olive oil, ½ teaspoon liquid smoke, 1 teaspoon garlic powder, 1 teaspoon onion powder, 1 teaspoon dried oregano, ½ teaspoon paprika, ½ teaspoon salt, ½ teaspoon chili powder, ¼ teaspoon black pepper

  • Cook the mushrooms in the oven for 20 to 25 minutes, then mix them with barbecue sauce.

  • For serving, spread mayonnaise on toasted buns, fill with the mushroom mixture, and top with vegan coleslaw.

Notes

  • Serve on any preferred hamburger bun - if vegan brioche is available it pairs wonderfully with this.
  • Use vegan barbecue sauce such as Stubb's brand, or make your own homemade.
