Healthy, easy and decadent these No Bake Chocolate Coconut Date Balls have only 7 ingredients and take 15 minutes to make! Vegan, gluten free, and no refined sugar!
Ingredients
Scale
- 3/4 cup raw cashews
- 1/2 cup raw walnuts
- 1 cup pitted dates
- 1/2 cup unsweetened dried coconut
- 1/3 cup cocoa powder (I like Hershey's Cocoa 100 % Natural)
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
For rolling chocolate balls:
- 1/2 cup unsweetened dried coconut
Instructions
- Place the dates in a small bowl and cover with boiling water. Let sit for 5 minutes
- While dates are softening, add the walnuts and cashews to your food processor. Process until they are completely broken down.
- Drain the dates well and add them next. Process until everything is completely mixed.
- Add the rest of ingredients: coconut, cocoa powder, vanilla and salt. Process until mixed, scraping down sides if necessary. The mixture should look crumbly, but will come together easily.
- Add the chocolate mixture to a bowl. Roll into approximately 1 inch balls. If the mixture seems oily that is normal it is just the nut oils coming out. Makes 18 balls.
- Roll the chocolate balls in coconut. Cover and chill in the fridge for 30 minutes so they firm up. Enjoy! For step by step photos see above post.
Notes
- They will keep in the fridge for up to 2 weeks in ziplock bag or a sealed container.
- To Freeze: Place on a baking sheet and freeze, once frozen add to a zip lock freezer bag or a sealed container. They will keep in the freezer for up to 3 months.
