How long do Chocolate Coconut Balls keep and can they be frozen?
- They will keep in the fridge for up to 2 weeks in ziplock bag or a sealed container.
- To Freeze: Place on a baking sheet and freeze, once frozen add to a zip lock freezer bag or a sealed container. They will keep in the freezer for up to 3 months.
How to make Chocolate Coconut Date Balls (AKA Energy Balls)
Place the dates in a small bowl and cover with boiling water. Let sit for 5 minutes
While dates are softening, add the walnuts and cashews to your food processor. Process until they are completely broken down.
Drain the dates well and add them next. Process until everything is completely mixed.
Add the rest of ingredients: coconut, cocoa powder, vanilla and salt. Process until mixed, scraping down sides if necessary. The mixture should look crumbly, but will come together easily.
Add the chocolate mixture to a bowl. Roll into approximately 1 inch balls. If the mixture seems oily that is normal it is just the nut oils coming out. Makes 18 balls.
Roll the chocolate balls in coconut. Cover and chill in the fridge for 30 minutes so they firm up.
Enjoy!
If you’d like to roll the balls in chocolate instead of coconut, see my Vegan Truffle recipe for instructions. (Chill in fridge before rolling in melted chocolate) For full recipe ingredients and instructions see recipe card below.
