Description

Quick and easy vegan chocolate pudding! Whip up this rich creamy classic dessert recipe in 10 minutes with a few simple pantry ingredients! Way better than store bought! Perfect snack cups for kids lunchbox or after dinner treat! No avocado or tofu. Gluten free

For vegan pudding:

  • 1/2 cup dark brown sugar, lightly packed
  • 1/3 cup unsweetened cocoa powder, I use Hershey's
  • 2 and 1/2 tablespoons corn starch 
  • 1/4 teaspoon salt
  • 2 cups unsweetened oat milk
  • 2 tablespoons vegan butter
  • 50 grams dark chocolate, chopped ( I use 1/2 dairy free chocolate bar)
  • 1 teaspoon vanilla extract 
  • 1/8 - 1/4 teaspoon almond extract (omit for nut free)*

Instructions

  1. In a heavy saucepan combine cocoa, sugar, cornstarch and salt. Add cold milk and whisk until combined and cornstarch is dissolved
  2. Place pot on stovetop over medium heat. Whisk constantly while mixture comes to a boil. Boil for 3 minutes while whisking constantly
  3. Remove from heat stir in butter, chocolate and extracts
  4. Using spatula Immediately pour into dessert cups, or serving bowl. Gently place a piece of plastic wrap directly on surface of each pudding. This prevents a skin from forming as it cools. Chill in fridge to set up. Enjoy chilled or slightly warm!
  5. Serve with a dollop of coconut whipped cream topping and chocolate shavings (recommended) or vegan ice cream if that's your thing😊 For Tips, FAQ, step by step photos see above post.

Notes

  • To store: Will keep covered in fridge for up to a week and can easily be made a day ahead prior to serving
  • measure almond extract accordingly a little goes a long way!😊
  • makes 4 to 6 servings depending on what vessel you use. Take and go reusable dessert cups for picnics or school lunches are awesome! If it's easier just make pudding in one bowl and once set distribute into cups
