GLUTEN-FREE BROWNIES

This recipe for brownies is not just gluten-free but also vegan and high in protein!

INGREDIENTS NEEDED:  – Chickpeas – Coconut milk – Cocoa powder – Applesauce – Coconut flour – Peanut butter – Baking powder – Brown sugar – Baking soda – Salt – Flax egg – Vegan chocolate chips

STEP 1: 

Begin by pureeing the chickpeas.  Then, combine them, the peanut butter, applesauce, and flax egg together until smooth.

STEP 2: 

In a separate bowl, whisk together the dry ingredients.  Add these to the bowl of wet ingredients and stir to combine into a thick batter. 

STEP 3: 

Pour the brownie batter into a parchment lined baking dish.  Cook until a toothpick inserted in the center comes out clean.  

These crispy tofu patties are ideal by themselves, but we love serving with rice and a simple bang bang sauce on top for added flavor.
