VEGAN TOFU COTTAGE CHEESE

Whip up fresh cottage cheese in minutes with this easy recipe using non-dairy yogurt and tofu!

For this recipe you'll just need some firm tofu, your favorite plain non-dairy yogurt, lemon juice, and lemon zest.  You may add salt and pepper or additional herbs if desired.

STEP 1: 

Begin by pressing the tofu to remove moisture.  This can take between 30 minutes and 1 hour.  Once done, cut into cubes. 

STEP 2: 

Put the tofu into a large bowl and use a fork, your hands, or a pastry cutter to crumble into pea-sized pieces.  This will give the cheese texture. 

STEP 2: 

To the tofu crumbles, you'll mix in the yogurt, lemon juice, and lemon zest.  Stir and taste.  You may add more lemon or salt if desired. 

Spread this cottage cheese on toast, serve with fresh fruit, or even the classic salt and pepper with a side of freshly sliced tomatoes!
