Instant Pot Mashed Potatoes (No Drain)

Description

No drain Instant Pot Mashed Potatoes are the easiest, creamiest side dish you’ll ever try. Cooked in just one pot and seasoned with sesame oil and vegan butter, they turn out fluffy, creamy, and soft every time!


Ingredients

Scale
  • 3 lbs yukon gold potatoes* 
  • 1 cup vegan chicken broth (1 to 2 teaspoons better than bouillon no chicken base + water) or good quality vegetable broth

  • 1 and 1/2 tablespoons toasted sesame oil

  • 2 tablespoons vegan butter

  • 4 to 5 cloves of garlic, finely chopped or minced

  • 1/2 to 1 cup unsweetened soy milk plus more if needed*

  • 1/2 to 1 teaspoon of salt plus more if needed (see notes*)

  • Pinch of black pepper

  • Toasted sesame seeds and sliced green onions for topping


Instructions

  1. Close and lock the lid and set the valve to ‘sealing’ position. Set the pressure cook button to high pressure for 9 minutes.

  2. While potatoes are cooking add the sesame oil, butter and garlic to a small microwave safe bowl (I use a small ramekin) cook for one minute and set aside.

  3. When time is up for the instant pot carefully turn the valve to ‘venting’ for a quick release. Once the pin has dropped, press cancel. Remove the lid, do not drain the broth. Stir in the milk, garlic butter mixture and salt and pepper. Mash potatoes with a potato masher until fluffy. Taste and adjust seasonings, add more salt, milk, butter etc.. if needed. 

  4. Serve mashed potatoes topped with sesame seeds, green onions and a drizzle of sesame oil if desired. Gravy is always recommended 🙂 Enjoy! For photos, tips, suggestions and more see above post.

Notes

Potatoes: Can use other varieties of potatoes like red or russet potatoes, etc..

Plant milk: Sub any unsweetened plant based milk for the soy milk

Salt: in addition to salt add a drizzle of tamari or soy sauce for even more umami!

To storeKeep the cooked and cooled leftover potatoes in an airtight container in the fridge for 5 to 6 days.
