Description

This triple-decker Vegan Cranberry and Turkey Club Sandwich is loaded with holiday leftovers like vegan turkey slices, cranberry sauce, tofu bacon, and more! It’s the best vegan sandwich ever.


Ingredients

Scale
  • 3 slices of bread, toasted or plain

  • 4 -6 slices of vegan turkey, or any vegan deli meat
  • 4 -5 pieces of vegan tofu bacon

  • crispy lettuce, iceberg or romaine

  • 2 -3 tomato slices

  • Vegan butter

  • Vegan mayonnaise or pesto mayo

  • Herbed or regular vegan cream cheese

  • Cranberry sauce

  • Salt and black pepper


Instructions

  1. On a cutting board: Lay out 3 slices of bread. Spread some vegan butter on each piece. Then spread mayo on the bottom slice, cream cheese on the middle slice and cranberry sauce on the top slice of bread. Be generous with all the condiments!
  2. Now build the sandwich: place lettuce on the bottom slice of bread followed by tomatoes and then bacon. 

  3. Add the second slice of bread, cream cheese side up and add the turkey slices, (if thinly sliced I like to roll the turkey, it adds bulk and makes a nicer presentation). Add more lettuce, Season with salt and pepper.

  4.  Now top with the last piece of bread. Slice the sandwich in half or 4 triangles, plop on a plate, and enjoy! I like to serve mine with leftover vegan gravy and potato chips. Photos, tips and more in above post if needed.

Notes

  • Optional sandwich add ins: red onion and avocado!
