Description
Fire up the grill! This Vegan Portobello Mushroom Burger recipe is a summer staple that tastes meaty and juicy. Plus, they’re easier to prepare and cook than any other veggie burger!
Ingredients
Burgers:

4 portobello mushrooms, stems removed and tops gently wiped

3 tablespoons balsamic vinegar

1 tablespoon tamari
-
1 tablespoon oil
-
1 teaspoon steak seasoning (I use Montreal steak spice)

1/2 teaspoon italian seasoning
-
1/4 teaspoon chili powder
-
1 fresh garlic clove, minced
For serving:

4 hamburger buns (buttered and grilled optional)

Mixed greens or lettuce
-
Sliced tomatoes
-
Jarred roasted red peppers or pickled peppers (both delicious)

Thinly sliced red onions

Vegan pesto mayo (Recipe below)
Pesto (mix in a bowl)

3/4 cup vegan mayonnaise
-
2 to 3 tablespoons vegan pesto

Squeeze of lemon juice (to taste)

Instructions
- Marinate Mushrooms: Place the prepared mushroom caps smooth side up in a rimmed baking pan. Whisk the marinade ingredients together in a small bowl. Brush the marinade generously all over the mushrooms, let sit at room temp to marinate while you prep the rest of ingredients - 10 to 15 minutes.

Preheat grill: Preheat bbq grill or indoor grill to medium heat - 350° to 400° When hot brush grill with oil.

Cook: Place mushrooms on grill and cook for 4 to 6 minutes on each side or until tender, brush with any remaining marinade as you go. If topping mushrooms with cheese do so in the last couple minutes of cooking to melt. Toast buns on the grill at this time also. For baking instructions see notes*

Notes
- Optional add ins or subs: vegan ricotta, pickles, vegan cheese, tofu bacon, grilled pineapple, mustard, ketchup, etc..
- To bake mushroom burgers:Once marinated place on parchment lined pan. Bake at 400ºF for 15 minutes. Flip and brush with any remaining marinade and bake for an additional 10 minutes.
- Mushroom marinade easily doubled!
- Gluten free: use gluten free hamburger buns
- Store: cooked mushrooms will keep in a container in fridge for 3 to 5 days
