You guys will love these addictive and easy chili garlic noodles with a crave worthy 5 ingredient sweet and spicy chili garlic sauce. They are similar to Japanese garlic noodles but they pack some heat. They taste delicious hot or cold and there's no chopping involved. They're one of my favorite movie watching slurpy sticky spicy noodle bowls.
This garlic noodle recipe is vegan so you won't find chicken or any meat added. but you can pair the noodles with crispy tofu, seitan chicken, steamed broccoli, bok Choy, mushrooms or stir-fry veggies added to the garlic noodles to make it a complete meal, and don't even think about using an instant pot, this recipe is way faster than that!

What are chili garlic noodles made of ?
These are the ingredients needed:
Noodles: I like the texture of spaghetti pasta or spaghettini but you could use any type of vegan noodles like ramen noodles, wide rice noodles, wheat noodles, udon, etc..
Chili garlic sauce (paste): sometimes referred to as chili garlic paste. gives the noodles some spice, heat and flavor. Not sambal oelek or sriracha it's not the same! For more information on the paste see below
Braggs liquid aminos: adds the saltiness and umami flavor, could also sub with low sodium soy sauce or lite tamari. I like recipe best as written
Sugar: that's where the sweet comes in!
Sesame oil: toasted sesame oil adds nutty flavor I don't recommend using vegetable oil
Garlic: granulated garlic (powder) adds extra hit of garlic
Green onions: aka scallions needed for that onion hit that compliments the noodles so well!
How to make chili garlic noodles
You will adore this easy noodle recipe. Here is how this dish is made!
- Cook noodles: Boil noodles according to package instructions
- Make sauce: while noodles are boiling, mix the chili garlic sauce and rest of ingredients in a small bowl. Microwave sauce mixture for 30 seconds or so to dissolve sugar.
- Toss and enjoy: Drain noodles, mix in sauce. Garnish with some diced green onion. Serve and Enjoy! I recommend using chopsticks so you can savor them longer, lol For full ingredients and instructions see printable recipe card below
What is chili garlic paste?
Chili garlic sauce is a blend of chilies, garlic, salt and vinegar. A condiment commonly used in Chinese and other asian cooking. Frequently added to flavor asian soups, noodle dishes, sauces, like Vietnamese dipping sauce, etc.. It’s a thick and very flavourful spicy sauce.
Frequently asked questions
They are both condiments prepared with chili peppers. But can vary widely in ingredients, some contain sugar, tomatoes, etc.. and paste is usually thicker. So always read the label to be certain it is the one you want. This recipe calls for chili garlic sauce which is used in various asian recipes
-You can add your favorite vegan protein like crispy air fryer tofu, chicken seitan,
-steamed vegetables like broccoli, carrots, etc..or stir fried mushrooms, red bell peppers, onions
-Serve alongside fried rice and vegan orange chicken!
Absolutely! use any gluten free noodle like brown rice noodles, buckwheat noodles (aka soba noodles) chickpea pasta, etc..

Sweet and Spicy Chili Garlic Noodles are a quick and easy 15 minute (or less) noodle bowl. They're naturally vegan with a flavor packed asian garlic sauce that has only 5 ingredients! It's the best quick noodle recipe!. Add your favorite protein and veggies and make it a meal!
Ingredients
- 4 tbsps Braggs liquid aminos, (see notes for soy sauce, Tamari options*)
- 1 and ½ to 2 and ½ tablespoons chili garlic sauce, I use 2 & ½ and it's spicy but oh so good
- 2 teaspoons sesame oil
- 2 tablespoons sugar
- ½ teaspoons granulated garlic (powder)
- ⅓ cup chopped green onions, green part only, ( 3-4 green onions)
- 8 oz uncooked spaghetti pasta noodles, use gluten free if needed*
This recipe is easily doubled, tripled, etc...
Instructions
- Cook pasta noodles according to package instructions, drain but don't rinse.
- While pasta is cooking whisk together the sauce ingredients in a small bowl, (not green onions) microwave for 30 seconds or so until the sugar is dissolved.
- Add cooked pasta, and sauce to a medium serving bowl, mix with tongs. Garnish with green onions

Notes
- I definitely recommend using Braggs for this recipe. Low sodium soy sauce can be used but will be saltier. Lite Tamari might work but I haven't tried it
- Use any noodles for this dish, rice noodles for gluten free, soba noodles, ramen, etc,..
- Feel free to add steamed veggies, tofu, toasted sesame seeds or whatever floats your boat. I like these noodles as is for a quick and easy noodle bowl snack on my couch.
- I would say this recipe feeds 2 people for a meal and 4 people for a snack.

Yum!! I made these noodles for a family dinner. I used coconut aminos instead of soy sauce, and egg noodles. I kicked up the heat with some extra chili- a little warm for some, but I loved it. So easy to make!

Delicious! Definitely learned I cannot handle 2 tbsp of the chili garlic sauce heat wise but I’ll just adjust next time I make it and probs up the garlic powder a smidge. Super tasty though as is and I really appreciated how quick it was to make. Im gluten free so I used tamari and that worked/tasted great. I used white rice pad Thai noodles and they weren’t the best for this but I’m planning on the super skinny rice noodles next time. Unfortunately gluten free spaghetti can be great but not the right texture for this so I wouldn’t recommend that if anyone else is GF.

Wow! This was so delicious! I used coconut aminos and it was still super salty. If yours is too, just add a little extra sugar, some water and a little rice vinegar to combat the salt. I’m addicted. I added pork the first time I made it, but the second time I just added a little julienned carrot the last few minutes of the pasta boil. (I also used a little cornstarch to thicken the sauce.) So good both ways! I may add a handful of peanuts next time. Thanks for the recipe!
