I love this Macerated Strawberries Recipe, made with balsamic vinegar, lemon juice, zest and maple syrup. It's a quick, simple and delicious strawberry sauce, you might never go back to a regular strawberry again, mmmwahahaha.
As a kid I remember thinking the name 'Macerated' always sounded really weird to me, but the taste made up for the name that's for sure. My Mom used to make Macerated Strawberries for me and my brothers. It was a real treat over ice cream, or with her Strawberry Shortcake, yum!
This recipe adds extra goodness to so many things - cakes, pancakes, oatmeal, ice cream, and my personal favourite, waffles!
So for this Simple Macerated Strawberries Recipe you just clean, trim and slice your strawberries, add them to a large glass bowl, then add the balsamic vinegar, lemon juice, zest, and maple syrup. Give all the ingredients a stir.
Now let the strawberries sit for 20-30 minutes, or longer. The Strawberries will release their juices and become even tastier, if that's possible!
I make this recipe all the time to go with my Everyday Waffle Recipe. I just make the Strawberries up first and then start on my Waffle Recipe. The Strawberries are good to go by the time the waffles are ready. Win Win!

Ingredients
- 1 lb fresh strawberries ( 454 grams)
- 1-2 tablespoon Maple syrup (I like 2 tbsp)
- 2 tbsp fresh lemon juice
- 1 tsp lemon zest
- ½ tsp Balsamic vinegar
Instructions
- Wash, trim and slice your strawberries, add them to a glass mixing bowl.
- Add rest of ingredients, give it a stir
- Let sit for 20-30 minutes, strawberries will release their juices.
- Add to your favourite waffles, pancakes , ice cream or desserts
- Enjoy!
Notes
- If you'd like some boozy Strawberries add a splash of Grand Marnier, good with cakes or on ice cream.
