    What the heck is a mug cake?

    A mug cake is exactly how it sounds a cake in a mug, and it's cooked in the microwave! It’s like having your favourite piece of cake instantly! It’s genius!!

    Most mug cake recipes are egg free. Including an egg just doesn’t work. My recipe is vegan so it is dairy free too!

    So if your craving something sweet, you’re in for a treat folks, a delicious, fudgy, moist, gooey, chocolatey one!  My Vegan Chocolate Mug Cake is ready in 4-5 minutes from start to finish! Easy peasy!

    My husband has a sweet tooth so I have made this a lot for him! Just last week I showed him how to make it and he was blown away by how easy it was! The only down side is I have to limit him or he’d make like 10 a day, haha!

    Cake in a cup or cupcake in a mug, microwave cake!! Whatever you want to call it , it’s simple to make, rich, full of chocolate and the best! You can’t not make it!! Enjoy!

    How to make a Vegan Mug Cake:

    Ok guys this is so easy. Grab your favourite coffee mug from your cupboard. Add the dry ingredients: flour, cocoa powder, salt, instant coffee granules (espresso powder) , sugar, baking powder, and stir with a small whisk or a spoon

    Next add in the wet ingredients: water, oil, vanilla. Mix the batter until smooth. Stir in 1 tablespoon of chocolate chips. Sprinkle the other tablespoon of chocolate chips on top.

    Cook in the microwave for 60 seconds. Sprinkle with a few more chocolate chips. Grab a spoon and dig in!

    Ingredients

    Scale
    • 3 tablespoons all purpose flour
    • 3 tablespoons cocoa powder
    • 3 tablespoons brown sugar
    • 1/4-1/2 teaspoon espresso powder (instant coffee granules), regular or decaffeinated
    • 1/4 teaspoon baking powder
    • 1/8-1/4 teaspoon salt (a pinch)
    • 2 tablespoons dairy free chocolate chips (plus more more serving)
    • 1/3 cup cold water
    • 1 tablespoon oil, I use grape seed oil
    • 1/2 teaspoon vanilla

    Instructions

    To make the mug cake:

    1. Add the dry ingredients: flour, cocoa powder, salt, instant coffee granules, sugar, baking powder, to a microwavable coffee mug (must hold at least 1 and 1/2 cups of liquid) and stir with a small whisk or a spoon.
    2. Pour in the wet ingredients: water, oil, vanilla. Mix the batter until smooth. Stir in 1 tablespoon of chocolate chips. Sprinkle the other tablespoon of chocolate chips on top.
    3. Cook in the microwave for 60 seconds.
    4. Sprinkle with a few more chocolate chips. Grab a spoon and dig in! Add a small scoop of vegan vanilla ice cream if you like.

    • for gluten free: substitute gluten free flour in place of white flour
    • my microwave is 1100 watts so times may vary depending on your microwave

      This has been my pandemic go-to chocolate fix! The recipe is so simple and really versatile. I‘ve swapped out espresso with chocolate syrup, added caramel or peanut butter.. I even tried nuts (not recommended).

        Hi Jeff, You would need an oven safe mug. Bake at 350° for 15-25 minutes. Hope that helps!
