I love Mexican food and I can honestly say I almost always have guacamole with whatever dish I’m eating, that and salsa! I mean - come on right! You have to! It should almost be mandatory, haha.
My guacamole is over the top good! I have a few extra special ingredients I add… like lime zest, its a must! And… pickled jalapeños!
Add those along with the usual suspects, avocados, Roma tomatoes, cilantro, lime juice and little cumin. Throw in some salt and pepper Wow!!! You have a winner!
It will be your new favourite Mexican dip! Its creamy slightly spicy and so darn tasty
I like that its also healthy so there is no guilt when eating it! Woot Wot!
We go through a batch of this delicious dip pretty fast at our house. It's a must with Mexican dishes, so easy to make and so addicting! Pair it with my Pico de Gallo, some tortilla chips and you're all set. I'd go so far as to call that a light lunch!

If you're worried about spice I'd go easy on the pickled jalapeños, maybe start with 1 tablespoon and go from there, but hey if you like a little heat add more. This recipe is pretty versatile. As for consistency, the choice is yours, keep it chunky, half mash it, or mash it all up.

Ingredients
- 3 med avocados, peeled, pitted and cubed
- ¼ cup red onion, diced
- 2 tbsp lime juice (1 lime)
- 1 roma tomato, diced
- ½ - ¾ teaspoon salt
- ¼ tsp pepper
- ¼ tsp cumin
- 2 tbsp chopped cilantro
- 1 - 2 tbsp pickled jalapeños, diced
- 2 tsp pickled jalapeño juice
Instructions
How to make Easy Authentic Guacamole:
- Add onion & lime juice to medium bowl & marry flavours for at least 15 min
- Peel, seed and cube avocados & add to bowl
- Mash avocados or leave cubed
- Add rest of ingredients, stir
- Adjust seasonings if necessary
- refrigerate for 30 min or serve right away
- Enjoy!

Hi Verna I'd like to make this guacamole with a can of Rotel? Can I and how would I do that? Thanks

Yes you can use Rotel in this guacamole recipe! Just omit the Roma tomato and add, I'd say a 1/4 of a cup or so of the canned Roma tomatoes, drained or not your choice. Hope that helps enjoy Joan!
