    I love me some roasted mushrooms!!… and these are the best!

    I could eat mushrooms everyday- well I almost do I guess haha they’re a great meat replacer in my opinion, and so satisfying,

    Cremini, brown or white button or portabella mushrooms are the types I most often use. They are chewy, juicy and full of flavour whether they’re baked, stuffed or crisped up in a sauté pan.

    It's really easy to get flavour into mushrooms. They soak it up! My oven roasted mushrooms are absolutely delicious with my flavourful 7 ingredient vinaigrette (marinade). The recipe is a no brainer really! And super easy.

    The garlic balsamic marinade takes minutes to put together, the ingredients are: melted vegan butter, tamari, balsamic vinegar, nutritional yeast ( oh it’s so good in this!), lots of garlic- uh yah!!, maple syrup and Italian seasonings, boom! that’s all she wrote folks!

    I like to reserve the excess marinade for a fresh hit of garlic drizzled on when they mushrooms come out of the oven. This step totally makes this dish if you ask me!!

    Ok it’s mushroom time!

    How to make Garlic and Balsamic Roasted Mushrooms?

    Preheat the oven to 400° Line a large baking sheet with parchment and set aside

    Melt the vegan butter in a small bowl and whisk in the rest of the marinade ingredients. Set aside.

    Add the raw mushrooms to a large bowl. Pour over the marinade and mix well but gently.

    Using a large slotted spoon remove the mushrooms and spread evenly on the baking sheet. Reserve the excess marinade at the bottom of the bowl and return it to the small bowl to reheat later.

    Bake the mushrooms for 20 minutes.

    Remove from the oven and to a serving dish. Heat the reserved marinade slightly in the microwave, 30 seconds or so. (You want the garlic to still be fresh tasting 👍) Drizzle evenly on the top of roasted mushrooms. Garnish with chopped parsley or any fresh herbs if you like and a tiny pinch of course salt and black pepper.

    What to serve with roasted mushrooms?

    Tasty served as a side dish or a delightful vegan main course with mashed potatoes , scalloped potatoes or a healthy cauliflower mash and some grilled asparagus. Mmm! Drooling yet- I am haha! Makes a great addition to any holiday meal too!

    Oh and I love it along side my vegan Mac and cheese! Ooh I better stop now! Oh man!

    Once you make this baked mushroom dish you’ll be hooked, it’ll be your go to for quick tasty mushrooms I guarantee it!
    And it’s nice because you can mix it up with different fresh herbs at the end if you like! 😊

    Garlic and Balsamic Roasted Mushrooms: Fresh mushrooms coated in a tangy garlic marinade and baked in the oven to savoury juicy perfection! Easy 30 minute recipe! Vegan!


    Ingredients

    Scale
    • 2 lbs ( 908 grams) of mushrooms, white, brown, button or Cremini
    • 2 tablespoons vegan butter, I like Earth balance
    • 5 cloves of garlic, chopped small
    • 2 tablespoons nutritional yeast
    • 1 teaspoon Italian seasonings
    • 3 tablespoons Tamari, or you could use low sodium soy sauce
    • 3 tablespoons balsamic vinegar
    • 1 teaspoon maple syrup

    For Serving:

    • 1 tablespoon fresh parsley, chopped, or other fresh herbs like basil, cilantro, or dill (optional)
    • pinch of course salt and black pepper

    Instructions

      This sounds delicious! We sometimes have chanterelles we pick wild in our yard. Do you think they would be too delicate of a flavor to hold up to this marinade?

      This is my first ever comment on any food recipe but these mushrooms deserve nothing less. They are so good that even my boyfriend, who had really despised any kind of mushrooms, fell for them. We are definitely making them again.

      I don't have any balsamic vinegar. Have you tried this with any other vinegars? I do have some red wine vinegar. Thank you for this recipe, Verna. I really love mushrooms, too.

        Hi Sunny, I always use balsamic vinegar it's the best for roasted mushrooms. it is sweeter, Red wine vinegar is tart. So the flavour would be quite different. Start with 2 tablespoons of the vinegar and taste. Maybe you might want to add a wee bit more maple syrup😊 Hope that helps.
