My vegan parmesan recipe is not just cashews guys I also add roasted and salted sunflower seeds, nutritional yeast and some spices! And wow it makes all the difference in flavour! You’ll want to this glorious vegan cheese topping sprinkled on everything!!
I’ve bought follow your heart vegan parmesan, go veggie brand, Nooch It and Violife parmesan (never tried Daiya) in the past but the grocery store that carries these brands is an hour from me so making my own just makes more sense, it's simple, tastes better and is more economical!
And I always buy my raw cashews and toasted seeds at Walmart I can’t find them cheaper any where else.
This recipe is delicious topped on so many things like vegan mac and cheese, bolognese, spaghetti and meat balls, tofu scramble, soups, mashed potatoes, fettuccini Alfredo and of course caesar salad!
Amazing on popcorn too with some melted vegan butter oh man!! Seriously I could go on and on haha! You get the point
Oh and it lasts for weeks in the fridge! which is awesome!

Ingredients
- ¾ cup raw cashews
- ¼ cup sunflower seeds, roasted and salted (I buy mine roasted and salted)
- ⅓ cup nutritional yeast
- ½ teaspoon granulated garlic
- ½ teaspoon granulated onion
- ¼ teaspoon salt
Instructions
- Add all the ingredients to your food processor: raw cashews, nutritional yeast, sunflower seeds, and seasonings. Process until it has a fine mealy texture (much like parmesan), which takes no time at all. That’s it! Enjoy!
- Wonderful sprinkled on so many things like popcorn, vegan mac and cheese, bolognese, spaghetti and meat balls, mushroom and spinach pasta, tofu scramble, soups, mashed potatoes, caesar salad, fettuccini alfredo, to name a few!
Notes
- For nut free version (without cashews): substitute ½ a cup of hemp seeds and ¼ cup of pumpkin seeds (pepitas) for the cashews.
- Store in an air tight container in the fridge where it will keep for 3-4 weeks!
