My family loves my vegan chickpea salad sandwich. Tastes incredible and is healthy, gluten free and full of protein too and takes 15 minutes to make!! Yay for me? Egg free, tuna free, dairy free and delicious! I love chickpeas they are great in everything I swear!
This chickpea salad mix is a staple in my fridge. It is so versatile, throw it in a wrap, enjoy as a dip with crackers, chips and veggies, or as I've done here, make a tasty vegetarian salad sandwich! seriously this is my kind of food!
I've even had it for breakfast on toast with "Tofurky hickory smoked deli slices" and tomatoes - say what? hey it was good. haha.
The dill, lemon juice and especially the zest, make this Chickpea Sandwich next level good! and of course the vegan mayo (vegenaise) and toppings.
Tomatoes were born to be on this sandwich, and the cucumber YUM!

What are the ingredients in a Chickpea Salad Sandwich?
- chickpeas
- carrots
- celery
- red onion
- red pepper
- lemon juice and zest
- chopped pickles and juice
- garlic
- dill
- salt and pepper
- vegan mayonnaise
- bread
- tomatoes and cucumbers (optional)
How do you make a Chickpea Salad sandwich?
Add the chickpeas to a medium bowl
Smash with a potato masher or a fork to consistency you'd like
Add the rest of the ingredients (except bread) and mix well. Season with salt and pepper if needed.
Now build your sandwich,

Having said that you can definitely switch it up a bit, for a nuttier flavour add some tahini and or nuts and seeds, add a little cumin for some smokiness, etc,...

Chickpea Salad Sandwich - Incredibly Delicious!
Ingredients
Chickpea salad:
- 1 can chickpeas drained and rinsed
- 1 zest lemon
- 1 lemon juiced (about 3 to 4 tablespoons)
- ¼ teaspoon granulated garlic powder
- 1 dill pickle chopped
- 1,5 tablespoon dill pickle juice
- ⅓ cup red onion diced
- ⅓ cup red pepper diced
- ¼ cup vegan mayonnaise
- 1 stalk of celery diced
- ⅓ cup grated carrot (one small carrot)
- ¼ cup sunflower seeds I use roasted and salted (optional but recommended)
- 1,5 tablespoon dried dill or ¼ cup fresh chopped dill
- salt and pepper to taste
For sandwiches:
- bread slices or wraps of choice
- tomatoes cucumbers, lettuce, sprouts, etc.. (all optional)
- shredded beets optional
Instructions
- Add the chickpeas to a medium bowl.1 can chickpeas
- Mash with a potato masher or a fork to consistency you'd like, (see notes*)
- Add the rest of the salad ingredients and sunflower seeds if using and mix well. - Now build your sandwich or wrap and enjoy!bread slices or wraps of choice, tomatoes, shredded beets
Notes
- You can also use your food processor to combine mixture, add chickpeas first, pulse a few times, then add all veggies , pulse a few more times, until you're happy with the consistency. Then, add to a bowl, with rest of chickpea salad ingredients. Mix well.
- Optional add ins: sunflower seeds (salted) and or pumpkin seeds. They add a great crunch and nutty flavour

This recipe is on steady rotation in our home. I have learned to double this recipe, as it is impossible to stop myself from eating it straight out of the bowl. I am currently devouring it in a wrap garnished with pea shoots and pickled beets. I may need another one.

Mmmmm ... I saw this recipe a few days ago, and I've been dying to make it. I finally got around to it today. I am painfully slow in the kitchen, but this was quick and easy. And absolutely delicious!! I just added some mixed greens and wrapped it up in a tortilla. This will be a go-to recipe for me from now on!

This recipe could not be better. So good. I did use dill pickle relish and some of the juice instead of chopping a pickle, which I didn't have. I do have a question for you regarding the nutrition facts. Why does it say there is 4.1 mg of cholesterol?

I made this recipe and finished off a jar vegan mayo and started a second one. Didn’t know it but I had gotten wasabi vegan mayo and the second jar I used was that / it was a delicious spicy twist. My husband said we should always make it that way.
