I grew up eating this creamy coleslaw recipe- well a version of it anyways. I’ve kicked it up a couple of notches and of course made it dairy free and egg free. It is an excellent vegan coleslaw and super satisfying. There is no need to ever buy deli Coleslaw mix. Homemade is so much better!
I chop/shred all the veggies for this salad, red, green cabbage etc,.. but you could use food processor if you’re feeling rushed or just use the store bought bagged Coleslaw from supermarket. Fresh is definitely better though!
There's an interesting and tasty addition to this cabbage salad that isn’t really traditional so to speak… it’s chopped apples!! My Mom always added them to her coleslaw, so to me it is ‘classic’. Says me😊
I think the apples are the key. I love the sweet crunch they give. Tie it all together with the dressing and veggies and you've got yourself one delicious classic coleslaw vegan salad! And healthy too. Bonus!
Another great optional addition is sunflower seeds and pumpkin seeds. So TASTY! If I have some I will usually throw them in. They add a whole extra flavour element and a nutty crunch.

My vegan coleslaw dressing is simple with only a few ingredients but packs a lot of flavour, with vegan mayonnaise ( I used vegenaise) spices, apple cider vinegar, little sugar or maple syrup and pickle juice. Yup you heard me! haha. and no it's not an oil free vegan recipe but that doesn't mean it isn't good for you!
Pickle juice was the main dressing ingredient for our coleslaw when I was a kid, and it works like a charm for that perfect sour, tart flavour.
How to make vegan coleslaw:
This recipe is so easy!
- Thinly slice the green and red cabbage, grate your carrots and chop your parsley, green onions and apple and add them to a large bowl. Mix in the salad dressing (and seeds if using) and serve! Will keep in the fridge for 3-5 days. For full ingredients and instructions see recipe card below.

Ingredients
- 3 and ½ - 4 cups green cabbage, cored and finely sliced
- 1 cup red cabbage, cored and finely sliced
- 1 cup carrots, grated
- ¼ cup green onions, chopped ( green parts only)
- ¼ cup fresh parsley, chopped
- 1 apple, cored and chopped ( I used Gala)
- ¼-⅓ cup mixed seeds, (like sunflower and pumpkin seeds) (optional)
Dressing:
- ⅓ cup Vegan mayonnaise ( I use Vegenaise)
- 2 tablespoons dill pickle juice
- 1 tablespoon apple cider vinegar
- 2 teaspoons sugar or maple syrup
- ¼ teaspoon celery salt
- ⅛ teaspoon celery seed
- ¼ teaspoon pepper
- salt to taste
Instructions
- Mix all the dressing ingredients in a small bowl and set aside
- Add the finely sliced green and red cabbage, grated carrot, chopped apples, green onions and parsley, and seeds ( if using) to a large bowl.
- Pour in the dressing and mix everything until combined. Season with salt and pepper if necessary.
- Enjoy!

- Will keep in the fridge for 3-5 days
- You can substitute equivalent amount of bagged coleslaw for the cabbage and carrots if you like.
