Rosemary Garlic No Knead Bread! That’s right a loaf of artisan bread that requires no kneading and just 6 simple ingredients then baked to perfection in your Dutch Oven!!
You don’t need to run to bakery folks! This No Knead bread recipe is so simple you won’t believe it! It’s a slow rise bread that is essentially steamed in your Dutch Oven which gives it incredible flavour and the beautiful crispy crust is formed the last 15 minutes or so of baking when you remove the lid.
My oldest daughter Alexa got me hooked on this bread as she makes it often. I have put my own twist on it with fresh rosemary and garlic. I guarantee it will be one of the best loaf of artisan bread you’ll make and the easiest too!!
What is No Knead Bread?
It’s a bread dough that requires no kneading! Everything gets put in a bowl, mixed together, left to rise for quite a few hours or overnight (which is what I do) The yeast does all the work for you! It’s then placed in your pre heated Dutch Oven and baked! No kneading required!!
No Knead bread first came about in the New York times quite a few years ago and there have been lots of variations since then.
This is a super simple dough and the less you handle it the better. I like to let mine rise overnight for at least 12 hours or longer. You could go up to 24 hrs.
No Knead Bread Variations:
Here are some different add ins for No Knead bread, instead of rosemary and garlic try these different flavour combinations:
- Dried cranberries or raisins and seeds like sunflower and pumpkin
- Just seeds like pumpkin, sesame and sunflower
- Chopped walnuts, pecans or almonds, dried cherries, orange zest and cinnamon
- Chopped sun-dried tomatoes and or artichokes, Italian seasoning or fresh basil or both!
- Mixed fresh herbs like rosemary, sage, thyme, oregano and fresh or roasted garlic
- Green olives stuffed with pimentos or garlic, chopped (one of my daughters fav's!)
- Chopped pickled jalapeños and grated vegan cheese
- Sprinkle a little of your favourite course salt on top before baking (a little goes a long way) There are also some delicious salts out there that are infused with herbs and spices! YUM!!
How to Make No Knead Bread:
In a large mixing bowl add the flour, yeast, salt, garlic and rosemary.. Mix it together. Add the water and stir until mixed. It will be a sticky, shaggy dough.
Cover the dough with plastic wrap and let rise for 12-18 hours or up to 24 hours (I leave mine overnight 12 hours or so)
Preheat the oven to 450°. Place your Dutch Oven into the oven for 30 minutes.
While Dutch Oven is is heating, turn out your dough onto a floured surface. With floured hands gently form dough into a ball. (I barely handle mine) Place onto a piece of parchment paper until Dutch Oven is ready. Sprinkle with a wee bit of course salt if you like.
Once Dutch Oven is preheated, carefully remove from oven. Careful it will be very hot! Place the dough with the parchment into it. Cover and return to oven.
Bake for 30 minutes, remove the lid and bake 12 -15 minutes more or until the crust is browned to your liking.
Remove the loaf from the Dutch Oven and cool completely on a cooling rack before slicing.

Verna, Can I make this bread ahead of time for entertaining?
Verna Rindler
Of course, you can!
jodi
HI - I love this recipe and have made it countless times! It's turned out perfectly EVERY time! But I'm having friends for dinner tonight and forgot to make the dough last night! Ugghhhhh!!! Any chance you've found a way to rush the rising? 🙂
I'm going to try it and see what happens but thought I'd ask too!
Verna Rindler
Hi Jodi, I would add an additional 1 and 1/2 teaspoons of yeast, let it rise until ready to bake. 🙂
Liz
Does the parchment paper go into the oven?
Verna Rindler
Yes, pick the dough up by the parchment paper and carefully set in the Dutch Oven. Enjoy! 🙂
Stephanie
What size Dutch oven did you use for this recipe?
Verna Rindler
I used a 5 quart dutch oven to bake the bread. Little smaller or larger would be just fine also 🙂 enjoy!
Laura
I wanted to cut this recipe down a bit to 2 cups of flour and all the other ingredients adjusted accordingly.
How long would I cook that smaller loaf for?
Verna
Hi Laura, I haven't made adjustments like that myself but I am sure baking time would remain the same. Enjoy the bread 🙂
Pat Em
Question: Do you let the dough rise on the counter or in the fridge? Thank uou!
Verna
Hi Pat, I let the dough rest on the counter. enjoy!
cristina tomas
This is the best bread recipe, tasty, can not be any easier, versatile. Thank you so much
Cristina
Verna
You are so welcome!! 🙂 thanks Cristina
Anda
Have you tried any gluten free versions ?
Verna
Hi Anda, no I have not -there are lots out there on google search though. If you give it a try let me know how it goes! 🙂
cristina tomas
This recipe is great! I made it many times, so easy and tasty, I highly recommend it. some times I make it with olives
other times with walnuts and many times with the original recipe. thank you so much! Cri9stina
Verna
Thanks Cristina! So happy you're enjoying the bread, really appreciate your comment. Feel free to leave a star rating too 🙂
Lizze
Hello, and thank you for this. In step 3*, couldn't you just turn the dough out onto floured parchment paper (instead of a floured surface), form the ball, do the coarse salt, and then put that parchment paper right into the heated dutch oven?
*step 3 says: "While Dutch Oven is is heating, turn out your dough onto a floured surface. With floured hands gently form dough into a ball. (I barely handle mine) Place onto a piece of parchment paper until Dutch Oven is ready. Sprinkle with a wee bit of course salt if you like ( a little goes a long way)"
Verna
oh I'm sure you could 🙂 This just how I always make it. Enjoy Lizze!
Sarah
Can I do this with whole wheat flour?
Verna
I haven't made with whole wheat I'm sure it will be fine just denser. I'd recommend doing 2/3 AP flour 1/3 whole wheat. Enjoy Sarah
Caren
Hey Verna. Have you tried this recipe with sourdough starter instead of yeast? I’m a bit obsessed with sourdough right now, but I’m not experienced enough to be playing around with recipes myself!
Verna
Hi Caren, no I have not and it would depend on how you feed your sourdough starter so I wouldn't have exact measurements but is it possible? absolutely!
Linda
If I wanted to split the one loaf into 2 and make 2 smaller loaves, how long would I cook the smaller loaves? Should I cook them separately or side by side in one Dutch oven? I want to give them as gifts, but in smaller versions. Thanks for any advise.
Verna
Hi Linda, 2 mini loafs would work fine. I would bake for same amount of time. Enjoy!!
Anna
Does it have to be a dutch oven? Or could I use a cast iron skillet? I think this would be fine except I don't have a lid for it .... which then it couldn't rise. What do you think?
Verna
You could use a casserole dish with a lid. Enjoy Annna!
Suzanne
Hi, Verna,
I had a lot of trouble when I turned the raised dough on to a floured surface. It was incredibly sticky and I had to add much more flour than I wanted. I had to use a spatula to try to get it off the board, in fact! I’m not sure what I did wrong and maybe you have some advice for me. The bread did turn out fine. the crust was a bit tougher than I would have wanted, likely due to the extra flour. Many thanks for answering this.
I am sure with some tweaking this will turn out better next time.
Verna
Hi Suzanne sorry you had trouble, next time I would maybe add a wee bit more flour, the dough should be sticky but not overly wet sticky if that makes sense. Hope that helps
