Best Peanut Noodles Ever!

These Peanut Noodles are crazy good, slightly spicy and drenched in the best peanut sauce ever! and ready in 15 minutes!! This Thai inspired noodle dish makes an easy vegan meal or snack any day of the week. Delicious served hot or cold.

Ok guys I love noodles! I seriously eat them to much! And this peanut noodle recipe will make you a noodle addict too! and the best part is it takes minutes to make and the ingredients are super simple. You probably have them all in your pantry and fridge right now.

I use either spaghetti noodles, spaghettini or vermicelli noodles for this recipe. It works the best for texture and slurp factor. Trust me on this!? Rice noodles are a great gluten free option!

The peanut sauce is so good that you’ll be licking your bowl! I’m not kidding!!

Ingredients for peanut sauce:

  • Natural peanut butter
  • Tamari
  • sesame oil
  • fresh grated ginger
  • Coconut milk
  • Rice wine vinegar
  • Lime juice
  • Sugar or sweetener of choice
  • Chili garlic sauce
  • Cilantro
  • Curry powder
  • Water

I eat these peanut noodles pretty much as they are but there are so many optional toppings you can add for serving (which I do when I have company?)

Yup when it's just me and hubby, we eat Em straight up, sitting on the couch, channel surfing with a big ol bowl of warm peanut noodles!!)

I don't consider this noodle recipe a salad. This is a delicious fast and easy slurpy peanut noodle bowl! but hey make it your own!❤️

Optional toppings for peanut noodles:

  • Toasted sesame seeds
  • Thinly sliced red cabbage
  • Grated carrot
  • chopped cilantro
  • Edamame
  • Roasted and chopped peanuts
  • Diced green onions
  • Crispy tofu
  • lime wedges

How to make peanut noodles:

  1. First cook your noodles according to package instructions. Add to a colander, drain and rinse well with hot water. Return noodles to the pot. Add a drizzle of sesame oil, mix, and set aside
  2. While noodles are cooking prepare your peanut sauce: add all ingredients to a medium sauce pot. Whisk together and heat on medium low heat until the sauce is warm, no need to simmer.
  3. Mix sauce with noodles and serve!
  4. I like to serve noodles in individual bowls and top with peanut sauce, and green onions.
  5. Serve with lime wedges, roasted chopped peanuts and cilantro! Easy Peasy and amazing!! For full recipe instructions and ingredients see recipe card below.

Description

These Peanut Noodles are crazy good, slightly spicy and drenched in the best peanut sauce ever! and ready in 15 minutes!! This Thai inspired noodle dish makes an easy vegan meal or snack any day of the week. Delicious served hot or cold.


Ingredients

Scale
  • 1/2 lb (227 grams, 8 oz) uncooked pasta, I use spaghettini, spaghetti or vermicelli ( use rice noodles for gluten free)
  • 1/4 cup green onions, diced

Peanut Sauce Ingredients:

  • 1/2 cup natural peanut butter, smooth or crunchy
  • 1/2 cup canned coconut milk (full fat)
  • 2 and 1/2 tablespoons Tamari 
  • 2 teaspoons Chili garlic sauce
  • 1 tablespoon rice wine vinegar, not seasoned
  • 1 and 1/2 tablespoons fresh lime juice
  • 1 tablespoon toasted sesame oil
  • 1 tablespoon sugar or sweetener of choice
  • 1 tablespoon fresh ginger, peeled and grated ( I use a box grater)
  • 1/4 cup chopped cilantro
  • 1/2 teaspoon curry powder
  • 1/3 cup water

For Serving (Optional):

  • lime wedges
  • chopped cilantro
  • chopped roasted peanuts

Instructions

Notes

  • I like to store the leftover sauce and noodles separately in fridge
  • Will keep for 5-7 days covered in the fridge
  • the peanut sauce recipe is easily doubled.

      Hi Linda, the lime juice is a great addition, you could leave it out if you don't have any but the flavour won't be the same. Add some lemon if you have some! If not enjoy without! Hope that helps!

      Hi Diane, yes you can use apple cider vinegar in place of rice wine vinegar. I prefer the flavour of the rice vinegar though. Enjoy!

    Hi Verna! I just made this, absolutely delicious!! One question, should it ( the sause )be runny? Or should I thicken it a bit? I've not yet added it to the noodles, I'm having it over organic millet&brown rice ramen noodles Either way its delicious ?Thanks so much for all your amazing recipes?
