I have a few pasta salads up my sleeve and this is one of my favs! It’s sure to please everyone’s taste buds.
With fresh and easy ingredients, chopped cucumbers, cherry or grape tomatoes, orzo, black olives (or Kalamata), marinated artichokes, bell peppers, red onions, fresh herbs and a flavour packed greek dressing!- you will make this Salad dressing over and over again trust me!!
Don’t worry the feta will not be missed!!
How to make Mediterranean Orzo Salad with Greek Salad Dressing:
Start by cooking the orzo according to package directions. Don’t over cook! Drain pasta and add back to pot with cold water and drain again. Drizzle with oil to prevent sticking and set aside.
Next make the greek dressing: combine all the dressing ingredients in a jar with a tight fitting lid and shake to combine or whisk together in a small bowl, and set a side.
Lastly prep all the veggies and herbs and add to a large salad bowl. Add the orzo pasta. Pour the dressing over the the salad and mix well. (I like to dress this salad just before serving).
