When I think of chicken salad I think of the Waldorf salad I used to make, which this vegan chicken salad recipe is loosely based on. To replace the chicken I used Seitan, and tofurky chick’n is my favourite vegetarian alternative for shredded chicken hands down! I thought about using soy curls but the mock chicken meat won out easily!
And of course I've kicked everything up a few notches because that's just what I do! I'm all about flavour folks. And this homemade salad has tons of it! No need to run to the deli!
With healthy ingredients like red grapes, crunchy apples, celery, onion, red pepper, your plant based protein, simple but amazing vegan mayo based dressing with dill, vinegar and spices you have an award winning vegan summer salad, that's ready to serve in minutes! You’re family will love it!
And trust me vegetarians and meat eaters will devour this and will probably not believe it’s meatless and dairy free! It’s s total crowd pleaser! And inexpensive and easy to make, no food processor required, Yay!
I enjoy this salad on bread or a tortilla wrap with lettuce for lunch and it’s awesome served with crackers, sliced baguette or garlic bread for a potluck, YUM!!

How do you make Vegan Chicken Salad?
Prep and chop the Seitan, vegetables, apples and grapes and add them to a large bowl.
Whisk the dressing ingredients together in a small bowl.
Pour the dressing over everything. Mix well. Season with salt and black pepper if needed. Enjoy!

Vegan 'Chicken' Salad: seitan, raw crunchy veggies, grapes and apples, tossed with a delicious creamy mayo dressing! Makes a perfect vegan sandwich. Great for a summer potluck too! The Best!
Ingredients
- 227 grams -vegan chicken pieces, chopped (about 1 and ½ cups), I use Tofurky Plant Based Chick'n lightly Seasoned
- ¼ cup red pepper, diced
- ¼ cup red onion, diced
- 1 celery stalk, diced
- ½ cup red grapes, halved or quartered
- ½ red apple, cored and diced, I like gala or fuji
For the dressing:
- ⅓ cup vegan mayonnaise, I use Vegenaise
- 1 and ½ tablespoons dill pickle juice
- 1 teaspoon red wine vinegar
- 1 teaspoon dried dill
- ¼ teaspoon granulated garlic
- ¼ teaspoon granulated onion
- ¼ teaspoon celery salt
- ⅛ teaspoon poultry seasoning
Optional add ins:
- ¼ cup slivered almonds or chopped pecans
Instructions

Notes

- Gardein meatless chick'n strips is also great option to use in place of real chicken
- the salad will keep covered in the fridge for 3-4 days.

While there is no specific indication that it is unsafe to eat them without cooking, it will help improve the texture and flavor if you at least heat them through.
